Asiago Focaccia, Italian cheese baked with garlic on olive oil covered bread, it’s one of Jackson’s favorite snacks.
6 frozen dinner rolls dough
2 cloves garlic minced
2 tablespoons grated onion
2 cups Asiago cheese, grated
2-3 hours before you are ready to cook place frozen dough a few inches apart on an oiled cookie sheet to thaw.
Cover with cloth and place in a warm place for 2-3 hours.
When dough is thawed and double in size drizzle with olive oil
Heat oven to 375 degrees.
Using your fingers stretch to desired size, covering both sides of dough with olive oil.
Spread with garlic, then grated onion, evenly over dough.
Sprinkle with salt, pepper and oregano.
Top with Asiago cheese.
Bake 12-15 minutes.
Another recipe from #CookClub which I tinkered with was Cherry Tomato Focaccia. I used my Asiago Focaccia recipe as start so I could make quick mini-versions of this taste treat. My best friend Lisa even gave it a try, she is not one to do a lot of cooking…but she said she would do it again.
