The first carrots were mostly purple or yellow, then around the time Florida was being explored by Europeans the carrots was being transformed into the more common orange one we see today.
Colorful Roasted Carrots
6-8 colorful carrots
2 tablespoons butter, melted
¼ teaspoon salt
1/8 teaspoon pepper
1-2 tablespoons Florida cane syrup (or honey)
Heat oven to 425oF
Wash, trim, and peel carrots. Slice lengthwise.
Toss with melted butter then place in a single layer in a shallow roasting pan.
Sprinkle with salt and pepper.
Roast 15 minutes.
Remove from oven and drizzle with syrup, return to oven to roast for 10 minutes more.
