Honey Ginger Candy for our next road trip!
Before starting the cooking process:
Butter a foil-lined heat proof surface, to pour the hot candy mixture onto when ready. Make sure the surface is well buttered.
In a saucepan combine:
1 cup sugar
1/2 cup honey
1/2 cup water
Cook over medium-high heat, stirring to dissolve sugar.
1/8- 1/4 cup freshly grated ginger
Continue cooking until mixture reaches medium to hard ball stage.
Remove from heat and sir in:
1 teaspoon butter
1 teaspoon soda
Mixture will foam up.
Pour onto a well buttered foil-lined heat proof surface.
Let cool until candy is still warm but cool enough to handlle.
With buttered fingers, shape into balls.
