Hearty Cracker Country Vegetable Soup
2 tablespoons extra virgin olive oil
2 Spanish onions, chopped
5 cloves garlic, minced
5 leaves cabbage, thinly sliced
2 medium potatoes, peeled and cubed
3 tomatoes, seeded and chopped
3 cups chicken stock
1 cup corn, fresh or frozen
1 cup lima beans, frozen
2 tablespoons chopped parsley
1 teaspoon salt
½ teaspoon pepper
Sauté onion and garlic in olive oil, over medium heat until onions are translucent.
Add cabbage and cook 2-3 minutes. Stir in potatoes and cook 2-3 minutes. Add tomatoes and chicken stock; bring to boil, reduce heat and simmer 45 minutes. Return heat to high and stir in corn and beans; bring to a boil, reduce heat and simmer covered 15 minutes. Add parsley, salt and pepper and cook 5 minutes more.
