Cookies have always been a breakfast favorite around here, especially any kind of oatmeal cookie, at least to me. Served with a creamy cappuccino I feel as though I’m being pampered.
Makes about 2 dozen
½ cup quick-cooking rolled oats
½ cup light brown sugar
½ cup flour
¼ teaspoon baking powder
1/3 cup butter, melted
1 egg yolk
1 teaspoon vanilla
Heat oven to 375oF.
Stir all dry ingredients together until well blended.
Add butter, egg yolk and vanilla, stir to combine.
Drop by teaspoonful onto a parchment lined baking sheet.
Bake 8-9 minutes.
Remove from baking sheet as soon as firm enough to handle.
