Growing up watching Gilligan’s Island reruns in the kitchen while GrandMary was “fixing supper” is a memory filled with happiness, along with snacks of pimento cheese stuffed celery. On page 98 of “Jack Harris Unwrapped” is a recipe for Pimento Cheese Spread and a photo of Jack with “Gilligan”.
The Pimento Cheese I had growing up came in a little jar with a metal cap. After the jar was empty you could use it as a juice glass. I thought that was so clever! Now that I have enough juice glasses I like to make my pimento cheese from scratch. The recipe below is a very mild version so feel free to add more Worcestershire and pepper; even crumbled bacon bits are a delightful addition. This time I substituted Balsamic vinegar for Worcestershire Sauce and it is delicious! Jack said, “It’s like eating candy,” and he couldn’t wait to get home and make a sandwich. He offered to take a photo for my blog but his sandwich making doesn’t lend itself to glamour shots, so I declined the offer. Whether you are stuffing celery, olives or even pickled okra, my favorite, this is an easy way to make a healthy snack.
Combine and chill:
8 ounces sharp cheddar cheese, shredded
4 oz. jar chopped pimentos, drained
1/4 cup mayonnaise
1/4 teaspoon Worcestershire sauce
dash of white pepper
