A few of Jack’s favorites:
½ pound ground pork sausage, cooked and drained
1 ½ cups flour
1 tablespoon brown sugar
2 teaspoons baking powder
¼ teaspoon salt
¾ cup buttermilk
1 large egg, lightly beaten
¼ cup butter, melted
1 cup shredded Cheddar cheese
Combine flour, sugar, baking powder and salt.
In a separate bowl combine ream, egg and butter; add to dry mixture.
Stir in sausage and cheese.
Pour batter into a buttered 8” x 8” baking dish.
Bake at 375 degrees for 35 minutes.
Serve with Florida cane syrup.
Guava Glazed Cinnamon Sausage Gems
4 ounces medium Cheddar cheese (see Note)
1⁄2 pound hot sausage
1 cup all purpose flour
1 teaspoon cinnamon
2 tablespoons guava jelly
• Preheat oven to 400 degrees F.
• Grate the cheese and bring it and sausage to room temperature. Mix sausage with flour and cinnamon. Mix in cheese. Form sausage mixture into 1” balls and place in a single layer on a 15″-by-10″ baking sheet. Place in the oven and bake for 12 minutes.
• Meanwhile, in a small saucepan, melt the jelly over medium heat. Keep warm. Remove sausage balls from oven. Drizzle with melted jelly. Serve with wooden picks. Yield: 30 appetizers
Note: Do not be tempted to substitute sharp or extra sharp Cheddar, as they tend to be drier than medium Cheddar. And do not buy pre-shredded cheese. Pre-shredded cheese has an ingredient that keeps it from sticking together.
Cinnamon Sugar Sausage Pinwheels
A classic Southern treat, the Sausage Pinwheel is so versatile it can be a breakfast treat or party snack. (They can be frozen until ready to heat and eat.)
1/2 pound bulk sausage
1 cup flour
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon shortening
1 tablespoon butter
1/2 cup buttermilk
Whisk together flour, baking powder and salt.
Cut in shortening and butter with a pastry blender until mixture resembles coarse crumbs.
Add buttermilk and stir until ingredients are moistened.
Turn dough out onto floured surface and knead 4-5 turns, until no longer sticky.
Roll each half of dough into rectangle at about ¼ inch thickness.
Cover with uncooked sausage.
Roll up jelly-roll style, wrap in waxed paper and chill.
Heat oven to 425oF.
Cut roll into ½ inch slices and place on parchment lined baking sheet.
Bake for 15 minutes.
Remove from oven and sprinkle with cinnamon sugar.
