Reading cookbooks has long been a favorite pastime of mine and Nicki Pendleton Wood’s Southern Cooking for Company is a wonderful addition to my reading list. The book is fun to read, and not just because it features my Peanut-Butter Pie recipe on page 254.
Her cookbook “features more than 200 Southern hospitality secrets and show-off recipes”. In addition to truly Southern recipes, you also get a helping of truly Southern entertaining tips.
Here is another one of my Peanut Butter Pie recipes:
Chocolate Ganache Peanut Butter Pies
Beat together: 3 ounces cream cheese, 1/2 cup powdered sugar, 1 tablespoon milk and 1/2 cup peanut butter
Fold in: 1 cup heavy cream, whipped
Fill graham cracker pie crusts – 1 9″-inch or several mini crusts and freeze.
Prepare chocolate ganache and pour over chilled pies.
For the ganache I heated about 2 tablespoons heavy cream to boiling then whipped in about 2-3 ounces broken dark chocolate bits.
