Holding a waffle iron over the coals was at one time the only way to produce this popular breakfast food. Today waffles aren’t just for breakfast but are still popular for special mornings such as Father’s Day.
Older recipes for waffles have the basic ingredients, eggs, flour, sugar and melted butter. Today’s version includes vanilla for flavor and baking powder for a fluffier waffle as well as an electric waffle iron.
2 eggs, separated
1 tablespoon sugar
1 cup flour
2 teaspoons baking powder
1/8 teaspoon salt
1 cup milk
1 teaspoon vanilla
Beat egg yolks with sugar, milk, and vanilla.
Whisk together flour, baking powder, and salt; stir into egg mixture and beat well.
Beat egg whites until stiff and gently fold into batter.
Bake in waffle iron according to manufacturers instructions.
